Need easy child and WLS friendly recipes.

Please help. I am almost 3 months out so I still am unable to do raw fruits and vegetables.
I need some simple easy WLS friendly recipes. I also need them to be kid friendly as I have a 3 year old.

hey erica, i think i posted something similar to this about a year ago, i have a 2 1/2 year old. here are some ideas i have made that he loves too. i never measure anything so bear with me

mini meatloaves-
1 lb ground beef, or chicken or turkey or whatever
1c quick oats
1 egg
splash of either milk or broth so its not dry
season to taste
handful of shredded cheese (i use moz)

mix together and make 8 balls they end up being 2oz each perfect for a toddler and you! and my husband just takes two

sauce to put on top (optional)
ketchup, spicy mustard, worcestershire sauce, a tiny bit of splenda brown sugar (this is an easy way to make your own bbq sauce) pour over top

bake on 350 about 30 minutes

 

pizza-
lavash flat bread
either tomato or alfredo sauce
cheese
and toppings if you want
make a pizza out of it! brush a little egg wash on the lavash and bake for about 5 minutes until its a tad crispy pull out cover with toppings and bake until cheese is melted

tofu-
i buy the extra firm tofu, freeze over night then let defrost (it helps it get a little firmer) then slice into about 5 slices the long way (like a piece of pre cut cheese i guess... im terrible at explaining it) sprinkle with seasoning (i use a low sodium steak rub or chicken bullion dry) let sit for a few hours then squish between two plates to get excess water out. use a cookie cutter to make fun shapes (i do stars and dinosaurs) then spray a pan or grill and cook on each side until slightly golden.

tuna caserole-
soy noodles or brown rice or quinoa cooked
large can of solid white tuna
veggies of choice, i use peas and cauliflower
can of low fat cream of chicken or cream of brocoli
lots of cheese
layer in a pyrex sprinkle with panko crumbs and cook about 30 minutes on 350

faux shephards pie-
cook cauliflower, mash and mash with a little milk and a tad bit of salt and fake butter stuff (i call it butter but we use smart balance)
brown ground meat of choice
frozen corn (canned has a ton of sodium so be careful)
lots of cheese
layer in caserole dish
bake until cheese is melted

for snacks or desserts

eay peanut butter cookies-
1c peanut butter
1c splenda
1 egg
mix splenda and egg together until creamy, add in peanut butter
roll into cookies and presh flat on cookie sheet lined with parchment paper
bake at 350 abour 10 minutes
note: these are really crumbly but good!

pudding-
i pkg of s/f jello pudding (my son is a chocoholic so we use that)
i scoop protein powder
2 c milk
2 spoons of s/f f/f cool whip
mix together and refrigerate

also im a full time worker, full time student and full time mom, so there are lots of nights i just bake chicken breasts for us, or make a breakfast dinner or egg sandwiches (arnold flat sandwhich thins) cook one egg, top with cheese and a slice or two of deli turkey or ham



 

um... i will have to get back to you when i think of more, but i make these all the time, and they dont take long to prepare.
