Vinaigrette Recipes?
I'm would like to try some homemade vinaigrette dressings. Any recipes that you can share are most appreciated!!

Chipotle Lime Vinaigrette
1/2 c olive oil
1/4 c fresh lime juice
1 tsp minced fresh garlic
1 tablespoon chipotle pepper in adobo sauce
1/4 c fresh cilantro
2 tsp ground cumin
sea salt and freshly ground black pepper to taste
I throw it all in a blender and pulse for a few seconds.
This dressing is really good in a sweet potato salad.
Roasted @ Chopped Sweet Potatoes
Frozen Corn Kernals
Diced Red Onion
Diced Bell Pepper
1/2 c olive oil
1/4 c fresh lime juice
1 tsp minced fresh garlic
1 tablespoon chipotle pepper in adobo sauce
1/4 c fresh cilantro
2 tsp ground cumin
sea salt and freshly ground black pepper to taste

I made my own once just by putting the balsamic vinagrette, olive oil, and blackberries in a blender.

Red Pepper Vinegarette
1 red bell pepper
1/4c balsamic vinegar
1/2c extra virgin olive oil
2tbs honey
pinch salt and pepper
wiz in blender until smooth
makes about 1 1/2 cups
serving 2tbsp

i have made this twice. the first time with just a regulat bell pepper. the second time i roasted the red pepper. i like it with the roasted pepper better but good either way.
