Summery Waldorf Salad
I just had this for dinner. I will warn you that the portions are pretty large and it is high in sugar due to the fresh fruit in it. So not for newly post op or anyone who dumps on fruits. I sorta stole this from an old Weigh****chers recipe but I tweaked some of the ingredients in the dressing so its not exact:
2 Tbsp Fat Free Mayo
2 Tbsp Fat Free Plain Greek Yogurt
2 Tsp Fresh Dill
1 Tsp Salt
1 Tsp Cider Vinegar
6 oz Roast Turkey Breast (skinless)
1/2 cup chopped celery
1/3 cup chopped apple (I used a Gala)
1/3 cup halved seedless grapes
1/4 cup raisins
1 Tbsp chopped walnuts
Mix the first 5 ingredients in a medium size bowl until well incorporated. Then add the turkey, fruit and veg and the nuts. Gently fold until the dressing is coating all the salad ingredients. Chill in the refrigerator for at least an hour.
This recipe was designed for "2 servings" but as I said, the servings are pretty large. I plugged the stats into sparkpeople.com's recipe calculator (I had to 'try' to figure correct proportions) and it breaks down like this for 2 but would be less of everything per serving if you break it down into 4 servings.
