these sound great!!! i might have to wait until my braces are off before i try to make them. one questions though... is there a replacement for the honey, there seems to be a lot of sugar in honey

I'm not sure if there is a substitute for honey.  I think honey alternative to sugar. 
Your braces shouldnt interfere with eating the bars, they arent chewy or crunchy.  They are basically like eating a firm brownie (in my opinion)  You can leave out the nuts and cranberries

 Try a SF maple syrup. It will be a bit runnier though.

That is what I did as well, cut them up, wrapped them and tossed them into the freezer...I went a little lighter on the honey and added a bit of water to help make up for the missing honey for mixing purposes, still tasty
