Need a recipe for Baked Beans

  Just wondering if anyone has a good baked bean recipe, hopefully using splenda brown sugar or something like that.

Hi Tracy, if you google Diabetic Recipes you'll come up with some recipes I'm sure you can use!!  Also, Lilacs  on this forum has a great recipe as well!!  Good luck...let me know how they turn out...Patti K.

I used this recipe pre RNY but it does not have sugar except what's in the Barb BQ Sauce.

2 cans of pork and beans, drained and washed; or navy beans cooked and drained
1/2 onion; 1/2 bell pepper
barb b q sauce


saute the onion and bell pepper, add beans and sauce.  You can bake if you want to dry out a bit or just serve as is. 

If you want to be naughtly, saute the onions and bell pepper in bacon drippings.

If you don't have Barb B Q Sauce, add ketchup and a squirt of yellow mustard.

Here is one that i took from my PA boards. 

Ingredients

4 ounces bacon (4 slices), chopped fine (I used turkey bacon)
1 onion , minced
4 cloves garlic , minced
1 pound dried small white beans (2 cups), rinsed and picked over
8 cups water (I used half chicken stock just because)
1 cup strong coffee (black)
1/2 cup barbecue sauce , plus extra for seasoning (I used home made sugar free)
1/4 cup packed dark brown sugar (I used malitol brown)
4 1/2 teaspoons brown mustard (prepared)
1 tablespoon mild molasses (I kept this...)
  Tabasco sauce (or something similar) (Franks red hot sauce)

Instructions

    • 1. Adjust an oven rack to the lower-middle position and heat the oven to 300 degrees. Cook the bacon in a large Dutch oven over medium heat until beginning to crisp, about 5 minutes. Stir in the onion and coo****il the onion is softened, about 5 minutes.

    • 2. Stir in the garlic and coo****il fragrant, about 15 seconds. Stir in the beans, water, coffee, barbecue sauce, brown sugar, mustard, molasses, 1/2 teaspoon Tabasco, and 1 1/4 teaspoons salt. Bring to a boil, scraping up any browned bits. Cover and transfer to the oven. Bake, stirring every hour, until the beans are tender, about 4 hours.

    • 3. Remove the lid and continue to bake, uncovered, until the liquid has thickened to a syrupy consistency, 1 to 1 1/2 hours. Season the beans with additional barbecue sauce, Tabasco, and salt and pepper to taste.

    • 4. To Make Ahead: After cooking, the beans can be cooled to room temperature and refrigerated, wrapping tightly in plastic wrap, for up to 4 days. Reheat over medium-low heat before serving.

Tracy, I just got on this forum today and seen your request for baked bean recipe, it uses splenda. Hope you like it. I make this and take it to family gatherings, I never come home with leftovers. Grandma64

Stovetop Maple Sugar Baked BeansChef
1 t canola oil
1 small onion, finely chopped
1/2 C tomatoe sauce
1/4 C sugar-free maple syrup
1/4 C splenda granular
1 T molasses
2 t yellow mustard
1 t vinegar
4-5 drops liquid smoke(more if desired)
2 15oz cans pinto beans, drained and rinsed
   (you can vary the beans if you choose)

In a large saucepan heat oil, add onions, and saute` for 3-4 minutes until softened slightly. Add remaining ingredients and stir. Simmer on low for 25-30 minutes.

Servers: 6
Per Serving:

Fat: 2grams
Carbs: 26 grams
Fiber: 5 grams
Protein: 8 grams
Sodium: 160 milligrams
