3 course meal

Tonight was a three course meal with a main course, veggie side, and dessert

Salisbury Steak with onion gravy

Ingredients:
1 egg
1 can (10.5 oz) condensed french onion soup, undiluted, divided
1/2 cup dry bread crumbs
1/4 tsp salt
1/8 tsp pepper
1 1/2 lbs lean ground beef
1 TBL flour
1/4 cup water
1/4 cup ketchup
1 tsp Worcestershire sauce
1/2 tsp prepared mustard
** hot egg noodles or brown rice (for family or those that eat carbs)


Directions:
~ in large bowl beat egg and add 1/3 cup of soup, bread crumbs, salt and pepper.
~ Add beef and mix gently together
~ shape beef mixture into six oval patties
~ grill on indoor grill (or in a skillet; if in skillet then drain drippings from pan before continuing) for 4 minutes.
~ get a big skillet and combine flour with water until smooth (I combined the two in a small  bowl first)
~ add ketchup, Worcestershire sauce, mustard and remaining soup, bring to a boil
~ coo and stir for 2 minutes then place patties in skillet and simmer for 15 minutes until meat is no longer pink
~ Serve patties with gravy and over noodles for those eating them

Conclusion:
~ I really liked this. I didn't like the gravy with the ketchup in it. I would have omitted the ketchup and used starch to thicken it instead of flour and water. Just add a TBL or so of starch to the onion soup and let it boil til thickened.
~I also added sliced canned mushrooms to the gravy (the small can) and it was really good)
~ I would also make the patties thinner then as thick as I made them this time.
~ The patties had a really good flavor and the mushrooms really made it a Salisbury. Really nice.

Corn 'n' Veggie Bake

Ingredients:
1 can cream-style corn (16 ounces)
1 package frozen chopped broccoli, thawed and drained (I used mixed veggies thawed and drained)
1/2 cup crushed saltines, divided
1 egg, beaten
1 TBLS dried minced onion
1/8 tsp pepper
2 TBL melted margarine
1/3 - 1/2 cup shredded swiss cheese

Direction:
~ heat oven 350 degrees
~ In a bowl combine corn, cheese, broccoli (mixed veggies), 1/4 cup of saltines, egg, onions, & pepper
~ grease 1 1/2 qrt. baking dish and pour mixture into dish
~ Combine margarine and crackers and sprinkle over top
~ Cover and bake for 45 minutes

Conclusion:
~ I added the cheese because I thought the dish would be rather bland. I'm glad I did! My husband that does NOT like cream style corn LOVED this dish!! I thought it was very good!
~This dish is carb heavy though.
~ I did use gluten free crackers and low fat swiss.

Coconut Pie

Ingredients:
2 cups milk (skim)
1 cup sugar (splenda)
4 eggs
1/2 cup flour (I used 1/4 cup spelt, and 1/4 brown rice)
6 TBLS margarine
1 tsp vanilla extract
1/2 tsp salt
1 cup coconut (I used non-sweetened coconut. I would have grated my own, but didn't buy any fresh coconut. hehe)

Directions:
~ preheat oven to 350 degrees
~ Combine first seven ingredients in a blender. Cover and blend for 10 seconds. Scrape sides as needed (I didn't have to) Blend another 10 seconds.
~ Add coconut and blend for a few seconds.
~ Pour into a greased pie plate (I used a round cake pan and worked great)
~ Bake for 55 minutes, or until knife inserted in center comes out clean. Serve warm topped with whip cream or ice cream

Conclusion:
I really liked this dish! It was super tasty and just yummy! I had never had a crust-less pie before, but it was really yummy! If you like coconut, then you'll LOVE it!! Served with a bit of whip topping and it scrum-delicious! I think vanilla ice cream would be great too!

It was very good! But it didn't reheat so well. hehe It makes a LOT (compared to what you can eat POST surgery) so a great meal for a big family.
