Mustard-Apricot Pork Chops
Ingredients:
1/3 cup apricot preserves
2 TBL Dijon mustard
4 pork loin chops (1/2 - 3/4" thick)
3 green onions, chopped
*Hot cooked rice
Directions:
~ Mix preserves & mustard in small saucepan over low heat until well mixed and bubbling lightly along edges
~ dip underside of pork chops into preserve/mustard mixture and place on indoor grill
~Pour spoonful of mixture over top of pork chops and cook on indoor grill for 5 minutes, remove from grill and place in warmed oven.
~ add green onion to preserve/mustard mixture and heat to boiling and then lower to simmer for five minutes
~plate pork chops and top with preserve mixture, as much as you desire
~for those eating rice, place pork chop on top of rice and spoon extra mixture over chop and rice

Conclusion:
I love this!! My family loved it! The pickiest of my children even ate more then his usual just get a bite to get it over with! It was tangy with the mustard and sweet with the preserves and was very much like a sweet and sour sauce! The green onions gave it a bit of a pop flavor that was wonderful! I paired this with steamed veggies while the rest of my family enjoyed it over the brown rice I had made for them.
Alternate methods:
If you don't have an indoor grill (I use George Foreman's grill and LOVE it!! It's soo wonderful!), then you can broil them in your oven 4" from heat, brush with mixture and broil for five minutes, flip and brush other side with mixture and broil another 2-4 minutes until no longer pink and serve with remaining preserve mixture.
You can even grill them outside. They would be divine that way as well! simple, yet elegant dish!
