Pennsylvania-style Pork Roast

Pennsylvania-style pork roast [Edit Post]

This was a really good recipe. Though my boys liked just the pork and my husband liked just the veggies and sausage! hehe So I guess it worked out! hehe

Recipe:
1 tsp onion powder
1 tsp garlic powder
1 tsp celery seed, crushed (I used celery flakes, you'll need at least 2 tsps of flakes)
1tsp worcestershire sauce
1/4 tsp pepper
1 boneless rolled pork loin roast (3.5 lbs)
1 can (14oz.) sauerkraut, undrained
1 tsp sugar, optional (I omitted this)
8 oz. smoked kielbasa or polish sausage, cut into 1/2" circular pieces

Direction:
~ Pre-heat oven to 350 degrees
~ IN a small bowl, combine the first five ingredients: rub over roast (I wore gloves for this part so it wouldn't get under my nails).
~Place roast fat side up in a dutch oven (I used a roasting pan).
~Combine sauerkraut and sugar if desired.
~Spoon sauerkraut and sausage over and around roast.
~Cover and bake for 2 1/4 - 2 3/4 hours or until meat thermometer reads 160 degrees.
~Let stand for 15 minutes before slicing ( I did this part not even knowing it! Since we left the pan covered til my husband got home!! hehe)

Conclusion:
It's very good! Just a wonderful taste. I would use a bit more worcestershire sauce to make the rub spread easier over the meat.
~ I also cleaned and chopped two med to large potatoes and added it after the sauerkraut (so it was on top with the sausage) and those potatoes were soo tender and delicious! I think if I had just baked the potatoes with the sausage and kraut my hubby would have LOVED it just as much!! he's not a big pork fan. hehe
