Corn tortilla chicken lasagna
This recipe was rather easy and was VERY good! It makes a LOT though.
Recipe:
6 corn tortilla (6 inches)
3 cups cubed cooked chicken breasts (2 lrg cans of drained chicken can work as well)
1 can (28oz) drained & rinsed kidney beans
1 jar salsa (I used medium)
1 cup light sour cream
1 cup greek yogurt
1 lrg bell pepper minced
1 can sliced black olives, drained
1 small can diced green peppers (I use El Paso brand, DON'T DRAIN!!)
8 oz cubed velveeta cheese (reduced fat)
2 cups shredded cheddar cheese (fat free)
Directions:
~pre-heat oven to 350 degrees
~mix sour cream & greek yogurt together
~Place tortillas in bottom of greased 13x9" pan ( actually cut the outer tortillas to fit snug against the sides of the baking pan)
~layer ingrediants on top of torillas in this order: chicken, beans, salsa, sour cream & yogurt mixture, bell peppers, green chili peppers, olives, cubed velveeta
~cover baking dish with foil and bake in pre-heated oven for 25 minutes
~uncover baking pan, sprinkle on shredded cheeder cheese and back uncovered for 10 minutes, or until cheese is melted.
Conclusion:
We LOVE this dish! It's wonderfully flavored! Though in the future my husband says to omit the corn tortillas and just scoop the cassarole onto tortilla chips or a tostado bowl (think taco salad hehe). I of course didn't eat the corn tortillas and my husband said they really didn't add much flavor.
This dish was really very simple on flavors. It was filled with clean tastes and the bell peppers were just perfect with just enough crisp to have that lovely bell pepper taste to them. It's a great dish to make ahead, pop into the fridge or freeze and then heat the oven as soon as you get home from work and have a no fuss meal ready in about half an hour!

I did my recipe a bit different then what was in the cookbook~ I think the cookbooks suggestion would have worked a LOT better since it was very hard to spread the sour cream/yogurt mixture over the bell peppers. hehe
