Quinoa-Grapefruit-Cucumber Salad

I love quinoa because I can use it just like long-grain rice, without the dumping or craving that rice causes for me.

Quinoa is still high in carbs, but it also has quite a bit of protein, for a seed, and I've never had trouble with it.

If you are hungry for SUMMER! flavors this is perfect.  The cucumber is cool and clean, the grapefruit sweet and tangy, and there's a little cinnamon and mint to round it out.  SO GOOD!
