Easty meal to throw together

So, you have a can of beans, some sausage, a bell pepper, onion, and some garlic, what could you possibly come up with in time for the hubby coming home from work? 

Why would you need to? Since you had planned out your meals so well and meticulously. Well being yet again NOT reading a recipe completely you are forced to use what you have (the ingredients for said recipe you can not make) in a different way, which leads to


Wurst und Gemüse in Soße
(my very own creation in German. hehe Means sausage in gravy)

Ingredients:
1 turkey kielbasa sliced at an angle into large medallion sized pieces
1 can of ranch beans (or pinto beans in chili sauce)
1 med bell pepper (any color) sliced
1 med yellow, sweet, or purple onion, sliced
2 cloves garlic minced (I use 2 tsp jarred minced garlic)
3 TBL extra virgin olive oil
creole seasonings or Mrs. Dash Southwest chiplote salt free seasoning
Hot cooked brown rice


Directions:
**If you are making brown rice to go with the dish, start it 30 minutes BEFORE you cook the sausage mixture.
~Heat oil in a large skillet and fry kielbasa in oil til both sides are browned nice and dark
~ remove sausage from skillet and add veggies and garlic, stirring and sauteing for 2-3 minutes
~Add sausage back into skillet and reduce heat to med-low and cook undistributed til veggies are crisp tender (check every 10 minutes) with lid off
~ add beans (do NOT drain! Add liquid to skillet) and 1/3 to 1/2 can of water to skillet.
~Turn heat on med-high and scrape bottom of pan to get oil and liquid to mix as well as veggies and sausage. Coo****il bubbling and heated through
~For those not eating rice serve on plate seasoned with Cajun or Mrs. Dash, to your tastes. Those with rice, serve over rice with generous spoon of sauce poured over mixture and rice. Enjoy!


Conclusion:
this is of course a veration on red beans and rice. hehe
Left overs I serve on a toasted, crispy pita bread topped with fat free cheese for a quick and yummy breakfast, lunch, or snack. It's just super good comfort food without the calories, but with the goodness of protein we need!! Hope you like!

It is really easy! And if you cut up your veggies say on the weekend then all you have to do is throw it in the skillet and then serve (since we don't eat rice)! And soo flavorful!!
