What's for dinner?? Steak kabobs!
Well Fridays are our ordering out and movie night. But, since there is really nothing healthy that I can order, I went ahead and put down a dinner to cook for the night (knowing my hubby would be eating with me! hehe) and so I made kabobs. I suck at marinading though! hehe But they were very delicious.
Steak and Veggies Kabobs
1/4 cup packed brown sugar
1/4 cup lemon juice
1/4 cup canola oil (I used extra virgin olive oil)
1/4 cup low sodium soy sauce
2 garlic cloves, minced (I used jarred minced garlic 2 tsp)
3 whole cloves
Pinch of dried basil
2 1/2 lbs boneless beef sirloin steak cut into 1 1/4" pieces
24 cherry tomatoes (used grape tomatoes instead)
24 lrg fresh mushrooms
1 lrg green or sweet red peppers, cut into 1 1/2" cubes
2 small zucchini cut into 1" slices
1 med onion cut into wedges
Hot cooked brown rice (for those that can eat it)
Diretions:
~ In a bowl combine first seven ingredients: set aside.
~skewer meat and veggies. Place in large dish that allow kabobs to lay flat.
~Pour marinade over kabobs, cover and refrigerate over night or at least six hours, turning several times to coat.
~place kabobs on med-hot grill and cook til meat is to desired doneness. Remove from heat and serve over hot rice.
What I did:
I followed the directions to the t in MAKING the marinade and skewring the kabobs. Unfortunately I missed the little notation of TURNING the kabobs as they soaked in the marinade! DUH!! lol
~Next time, I would soak the meat and veggies in the marinade PRIOR to skewering (I just like typing skewered hehehe) and grilling them to make sure that they get as saturated as possible with the sauce.
~I also used the marinade to baste the kabobs while they were cooking and discarded the left overs afterwards. I think that really helped add flavor to them since I didn't turn them while they were marinating. Ahhh...live and learn yeah?? And for the pista~de~restistance.....

Yum Yum....looks great.
As you know next Friday I am able to eat mushy foods....I can not wait. Do you have any suggestions for me? You are gonna be my go to girl for recipes. I can not cook at all I have been a restraunat girl my whole life....duh..hense 260 pounds....But I did alright with all the junk food I bought home...LOL....that was my gourmet cooking....
Now, I am on a quest to learn to cook healthy. I want to be able to learn to cook 5 great meals well.

I made a LOT of chicken, turkey, egg, and tuna salads with minced celery, pickles, cucumbers (I did that in the mini food processer). Made a LOT of fruit sorbes (if you google fat-free & sugar-free sorbes, frozen desserts you'll find a TON of good ones). Also, eggface has a GREAT site for recipes.
I also made a greek yougurt dip with ranch dressing. It is to DIE for! I had it during this stage and still make it for my rye crackers and flaxers as a topping with some minced or diced raw veggies.
