Is it Ham Loaf time?
OK, Easter has passed which means you likely have some left over cooked ham. I wanted some ham loaf but didn't want to wait for the baking so I made ham loaf patties. I like to cook so this is more of a formula than a recipe, but here you go:
Ham Loaf Patties (makes 6)
Use your food processor to make 1 cup of bread crumbs using stale bread, dinner rolls, etc. Dump into a bowl.
Next, combine some onion and or celery with a little parsely and pulse until chopped. I ended up with a scant cup. Dump into the bowl.
Now pulse cooked ham until grainy. I had 2 cups. Dump into the bowl.
Add 2 eggs, some black pepper and 1-2 Tbsp of Thai chili sauce to the bowl and mix. Add milk as necessary to get things to stick and form into patties.
At this point you can give the patties a light coating of flour, cracker/bread crumbs. I pan fried my patties, you could bake the patties or just bake the mixture as a traditional ham loaf.
Ham loaf needs Hoseradish sauce so here you go:
Put 1tbsp butter with 1 tbsp flour in a small sauce pan and make a blond roux
Whisk in 1/2 cup milk with 2 tbsp horseradish, 1/2 tsp each of dry mustard, white vinegar, and sugar. Add salt and pepper to taste. I also added 2 tbsp of half and half. Bring to just short of a boil and then let cool a little to thicken.
I found this to great for using the leftovers in the pantry and fridge.
