Need Low Carb Dessert Recipes for Easter Please!
Morning All,
I am trying to plan Easter dinner and modify it to be relatively low carb. I've done pretty well so far, but am stuck on what to fix for dessert. I might make the strawberry pretzel salad - which everyone loves but kinda want to do a banana pudding. Any recipes would be appreciated...maybe a s/f chocolate pie recipe? Although, I'm kinda tired of s/f chocolate pudding...it has been my sweet 'staple' since lapband on 12/28.
I am glad to advise that I have also FINALLY made it to onderland! Staying there will obviously be the hard part. I get another fill on 4/8 which I'm hoping and praying it will get me to the 'green zone' or 'sweet spot'! Hopefully with warm weather nearer, I will want to eat more fresh veggies. I planted a garden so I'm excited about that and knowing I grew it safely and organically is even better.

This looks really good and you could probably subsitute greek yogert for the sour cream and make it ever better for us.
It has sugar to hold the meringue together and maltitol could do the same thing. Splenda would not, as I recall.
1 big container or lowfat cottage cheese
1 container of non-fat or SF cool whip
1 box od SF jello mix (I use strawberry)
as many as desired strawberries cut up OPTIONAL (could be different fruit pending jello flavor)
Directions:
empty cottage cheese in to large bowl (if you can get the juice out, it will be fluffier). pour jello mix in and stir until evenly mixed. Add cool whip and stir till mixed. Add cut up fruit and stir. You don't have to let it sit, but I chill it for a little while. it is SOOOOO YUMMMOOOOO!!!!!! Very good in protein too!
