Hey, I seem to have an abundance of chicken breasts in my house, and am planning on doing some chicken.

I like to cook things that are RNY friendly so I can enjoy, and the rest of the family are glad to partake as well!!!!

Anyone have any chicken recipes to share, cooking techniques etc???  I need to spice up my kitchen a bit.

I did something very simple with chicken for this week and it is really tasty

I bought Mrs. Dash Southwest Chipolte Seasoning and just sprinkled that on both sides of the chicken and bake it until done - to keep it moist I put foil over the dish.

I am having it for lunches and I brought some sprinkle cheese to melt on it and have some greek yogurt mixed with salsa to keep even extra moist.

 

Linda has a recipe on her website for orange chicken and that is freaking awesome.  She posts on here so you should be able to find her fairly easily

Sour Cream Chicken a la Crockpot

boneless, skinless chicken breasts
1 cup fat free sour cream
1/2 can healthy heart campbells cream of mushroom soup (the one w/ 2g fat)
onion soup mix to taste

put chicken in crockpot and cover with cream of mushroom soup and onion mix.
cook on low for 6-7 hours; when you have one hour left add sour cream and stir.

wicked good recipe.  i tend to add a little extra onion mix as I really like the flavor.

Season a whole chicken with salt and pepper. I also use a little garlic and oninon powder cuz I like the flavor.  At the bottom of a crock pot put 4 red potatoes wrapped in foil. Put the chicken on top of the foil wrapped taters. Cook on low 6-8 hours. Makes the moistest roast chicken I have ever had and the potatoes are done at the same time. My family loves it.

I did chicken 2 nights in a row. 

Last night was something I threw together.

Chicken
1 can homey
1 can black beans
1 lg can green enchilada sauce
1 can chopped chili's
LOTS  of cumin

saute some onion, garlic, carrots, celery in some olive oil.  Put the rest into the pot and let it simmer till the chicken is cooked. 

The family ate it with tortillas.

Tonight I made chicken curry.

I got this off Pam T's website and had it for dinner tonight- whole family liked- dh and kids had it with tortilla chips

Christine's Southwest Chicken

1 package frozen boneless, skinless chicken breasts (I think it was a 2lb bag)
1 can corn, drained (or frozen works too)
1 can black beans, drained/rinsed
1 jar salsa
1 brick cream cheese

In a large slow cooker, put the chicken in the bottom and top with salas, corn and beans. Don't bother stirring it, it'll take care of itself. Let it coook for 10 hours on low. About 30 minutes before serving place the brick of cream cheese on top and let it melt into the mixture.

I use the skinless breast, sliced in strips, stir fried with onion, yellow and orange bell peppers, a packet of Lawrys Fajita seasoning.   For tortilla, I use Flat Out wrap/flat bread, and top with some Fage 0% greek yogurt for extra protein and to replace sour cream.  When I want to skip the flat bread/wrap, I just put the chicken and veggies mix over tossed greens for a wonderful salad.

My family will use the typical tortilla wraps for their fajita's.

I made chicken stew with chicken Breast in my crock pot. Chicken melts in mouth.

Chicken Breast
Potatoes
carrots
onion
celery
chives
garlic
Campbell's reduced salt and Reduced fat Chicken Broth
Corn starch to thicken.

Chop everything up and throw in Crock pot add Broth and add little water just make sure everything covered . cook on high for 4 hours  about one hour before add Corn Starch in one cup of water. and whisk together.add to stew and  stir really well.
