The craving is drving me nuts

I really want to eat Eggplant Parmasean. I am 7 weeks post op and I have not tried it yet. Normally it is fried before baked but I would grill it instead. I would also use diet cheese and sugar-free marinara sauce. I am just unsure if I can tolereate it. Has anyone tried anything like this yet?

 I'm just one more week further out than you.  I make a baked chicken meal for my husband and I last night.  The chicken is breaded and browned before baking with heavy cream and parm on top.  I only had two bites and it stayed down fine.

I already know that would not sit well in me. I can not handle chicken or very much tuna. I seem to be very sensitive to things that are not pureed or very soft in texture. I hope this changes over time. There are several times that scrambled eggs do not sit well in my pouch. I guess I will try the eggplant,my sweetheatr loves the dish,and it freezes well so it will not waste. Thanks for your input. Congrats on your progression.

 I have a problem with tuna too.  I can eat chicken though if it isn't dry and I chew it really well and just eat maybe 1-2 oz.  Was just able to keep down some tuna salad yesterday but it doesn't taste right so I don't think I'm gonna have it again for a while.

I think you would be fine eating that.  Of course don't fry it since fry foods aren't the best choice lol. 

I personally don't eat "diet" cheese or SF marinara - I eat the full fat cheese to get in my good fats and I eat regular spaghetti sauce - I never have any issues. 

I don't like egg plant but I can tolerate chicken so I make a chicken parm w/ panko bread crumbs.........You could coat your egg plant in those and bake it ?

I made chicken before being rebanded.  I used Special K Protien Plus cereal (crunched up, added a dash of paprika and garlic powder) and dredged well pounded (really thin) chicken in this mixture.  I cooked it in an iron skillet sprayed with E.V.V.O.  Cooked it for about 4 minuted on each side on medium heat , topped it with my homemake tomato sauce and it was WONDERFUL!  I can't wait until I can eat regular stuff again so that I can fix this dish

I don't see why you can't cook your egg plant the same way.  Use whatever cereal you like and cru**** real good.  You could dredge the eggplant in whipped egg white then the cereal and then put it in the oven after you brown it for the final bake.

Eggplant is a soft food when it is cooked well, so I don't see why you couldn't eat it.

I agree on the regular cheese, you do need a little fat in your diet :)
