Sorry, I'm not Jewish but I would say just remember protein first and portion control.

I'm not Jewish either and anything I can come up with is "passover themed" and possibly even mildly insulting to a purist.

Arugula salad with hard boiled egg
Baked apple filled with nuts and raisins

i married into the jewish holiday..
My first passover I had brisket and the green beans..I made sure the hostess knew I had weight loss surgery so it had nothing to do with her cooking.. we also brought  a really good cheese so I had a piece of it as an appetiser.
