Bariatric Pulled Barbecue Chicken

Submitted by: Baratric Patient

This delicious alternative to classic pulled pork will be a hit any way you serve it! Serve with Nabisco® Reduced-Calorie Triscuit® Crackers or 1/2 of a small whole-wheat hamburger bun, if tolerated. Nutrition information below If you are in the early post-surgery stages, this can be pureed, also.

35 Minutes to Prepare and Cook

Ingredients

    4 boneless, skinless chicken breast
    Dash salt
    Dash pepper
14 Tbsp (about a half bottle) KC Masterpiece Classic Blend BBQ Sauce

Directions

Place chicken breasts, along with salt and pepper to taste, in a large pot of water and boil until fully cooked through. (Time will vary depending on whether you are using fresh or frozen chicken.)

Once the chicken is cooked, use a fork to pull the meat apart so it is thickly shredded. (Shredding too finely will cause the meat to become mushy once sauce is added.)

Place pulled chicken in a large skillet. Add BBQ sauce. Toss until chicken is coated. Heat through and serve!

Doesn't the sauce have a lot of sugar in it?

Yea is you were to eat all of it but you are only using 14tbs for the whole recipe and you should only eat 1/6 of the whole recipe. So actually you are only eating 2tbs not bad amount of sugar.  Some patients are not bother by that amount of sugar use caution everyone is different.  Enjoy!!
