Need Help!!

Ok guys here's the deal. I bought a package of chicken leg quarters (skin and bone still attached). Its easier for me to digest than breasts. The thing is I want to do something with it besides just bake it. Any ideas?

I don't know if they are any easier to digest. What I can help with is to say go to the recpie forum. There are great ideas there. Good luck. Maybe cook them in a crockpot?

try grilling it, or as previous poster said, crock pot cook it, i boiled mine and stripped the chicken away from the bone and tossed the skin and made shredded chicken enchiladas. there are a ton of ways of baking it though too.

 I'm sure it's to late but for the future: Crock Pot or one of those oven oven cooking bags. Carrots, string beans, onion, potatos if you eat them, in the bottom of the crock pot or bag, chicken on top. YUMMO. one of my fav dishes.

Chicken Cacciatore

Cook Time: 55 minutes

Ingredients:

  • 1 cup chopped onion
  • 6 chicken legs and quarter (remove leg from top making 2 pieces each)
  • 3 tbs flour whole wheat or white(you choose) I have used both
  • 1/2 cup chopped green bell pepper
  • 3 medium cloves garlic minced
  • 2 tablespoons olive oil
  • 2 cans (14.5 ounces each) stewed tomatoes
  • 2 teaspoons dried oregano,
  •  salt and pepper  to taste
  • 1 chicken, about 3 pounds, cut up
  • 3/4 cup dry red wine or chicken stock

Preparation:

Place flour salt and pepper to taste in plastic bag add cut up chicken and shake bag  Heat 1 tablespoon of the olive oil over medium heat in a large skillet. Brown chicken on all sides in hot oil, about 10 minutes. Remove chicken and drain off excess grease,  add l tablespoon of oil.  Add chopped onion, green pepper, and minced garlic to hot skillet; sauté on low until onion is tender. Stir in tomatoes, wine, oregano, salt, pepper . Add chicken back to sauce and bring to a low boil. Reduce heat, cover, and simmer for about 45  minutes, to an hour or until chicken is tender.  The more you cook it the tender the chicken will get and easier to digest.  Enjoy
