Ooo - sounds delicious with the chips & walnuts!  Hmm, I wonder what we would be able to eat post-op with those ingrediants.  I tried one of EggFace's protein cakes - would you be interested in something like that??  I'm sure those would be good w/ chips & walnuts

I have one that is very good...uses almond flour, but that's easy to find in most bigger grocery stores.  (Bob's Red Mill brand is usually in the baking section.)

I use Whey Low in my recipes for cakes, cookies, muffins, etc...it works better than Splenda.  Maltitol is also really good and you can sometimes find it in specialty stores or order online.

There is also DiabetiSweet that is sold at Walgreens or Target (most of the stores anyway).

There would be nothing wrong with a chocolate walnut quick bread.

As for it being a good idea, I go with the theory:  Eat all the junk food you want as long as you cook it yourself.
