Well, doll you're in luck!
I have a brand new oatmeal cookie - and Splenda WILL work if you don't have Whey Low or Nature Sweet (maltitol). I have the photos and everything, just need to get it on the blog!
As for the Ginger snap...the closest is the chewy molasses cookies that I'd put on the BariatricEating site. These are very good and you could add more ginger to give them more of a bite. They aren't "snaps" crisp...but the flavor is the same.
These can be crumbly at first, but hold together better as they cool...
OATMEAL COOKIES
1/3 cup melted butter
1/8 teaspoon salt
1/8 teaspoon baking powder
2 tablespoons flour
1 egg
2/3 cup Splenda or 1/3 cup Splenda and 1/3 cup Whey Low Gold
1 teaspoon vanilla
1/8 teaspoon cinnamon
1 1/3 cups oats
Chocolate chunks, raisins, nuts, etc, as add-ins
Preheat oven to 350 degrees. Lightly grease a cookie sheet and set aside.
In a medium bowl combine the butter, salt, baking powder, flour, egg, Splenda, vanilla, cinnamon, and oats. Add in raisins or nuts as preferred.
Spoon onto cookie sheet with a tablespoon and bake for 10-12 minutes.
Allow to cool for a couple minutes on the sheet and then remove to a wire rack to cool completely.
