"superfood" dip receipe - YUM!

 (makes about 1 cup)

Ingredients:

Beet Dip with Sour Cream and Horseradish
  • 1 medium beet (7 to 8 ounces)
  • 1/2 cup sour cream
  • 1 Tbsp. prepared horseradish
  • 1/2 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • 1 Tbsp. chopped dill or chives
Directions:

Peel beet, then grate on the large holes of a box grater set in a medium bowl.

Stir in sour cream, horseradish, salt, and pepper. Top with fresh herbs, and let stand 15 minutes before serving.

crazy question: Is the beet cooked or raw when you peel and grate it?

another silly question...? what do we dip into this dip?

I'm thinking the beet is raw as it does not instruct to cook it first. If it were cooked, I think it would be too soft. As for what to dip? Probably anything that you want.

I'm not a fan of beets but since this has horseradish in it I may actually try it. Like my dips to have a bite to them.

Actually, it's probably cooked - beets rule when they are roasted, and these are super easy - cut off ends, wash and dry, rub w/ olive oil, salt & pepper. wrap with foil, cook in oven for about 45 min. This recipe making it a dip sounds yummy!
