Not tons of protein, but if you're gonna have a cookie anyway, might as well eat one of these!

the cookies look great. i am going to give these a try. i also found the 35 min choc cake and lemon cake, but i cannot find the cheesecake souflle. what is its name. i would like to look at it.

I haven't tried it with anything else, honey...but I'm thinking that thicker regular plain yogurt would be fine. They might not rise as high, but would still be wonderfully yummy.
Just an FYI: You can make your own Greek-style yogurt.
Take some good quality PLAIN yogurt, and pour it into a coffee filter-lined colander that is placed over another bowl. (You need a few inched between the bottom of the bowl and the bottom of the colander so the liquid can drain out.) Cover with plastic wrap and place in the fridge for at least 2 hours.
The whey will drain off and leave the thick yogurt. The longer you let it drain, the thicker the yogurt will be.
Discard the whey as the bowl gets too full, if needed. When you've reached the thickness you like, return the yogurt to the container and store for days on end.
This is SO good!!
