sweet poatoe hash....

Sweet Potatoe and Sausage Hash....
3 tbl. olive oil (what ever you have)
1 pound sausage (turkey, pork, chicken) out of skin or loose
2 small sweet potatoes (about 2 in. dia...8 in. long) peeled, sliced thin
1 med, red onion (sliced thin and cut to 1/2 moon shape)
2 tsp. cummin
2 tsp. chili powder
1 tsp. dill
1 tsp. parsley
salt, pepper to taste
fty sausage in oil, chopping as you go on med. heat
add spices, onion, and sweet potatoe..continue frying and turning until poatoes are tender. turn off stove and sprinkle with cheese (what ever you like) add sliced tomato or some salsa..cover pan until cheese melts..WOOOHOOO......yummy...you can eat this for Breakfast, Lunch or Dinner. Put an egg over it or use it as a side dish...Your ideas are endles... I even added some veggies too....Hope you like it...Hugs...'Lucky
