Broiled Scallops

Scallops are my all time favorite seafood.  I pulled this together tonight and it was delicious.

8 large Sea Scallops
1 Tbsp butter
1 Tbsp olive oil
1 Tbsp minced garlic
1/3 cup chicken brother
kosher salt
fresh ground pepper

Turn broiler on high.

Very lightly salt and pepper both sides of the scallops.  Spray baking sheet with non stick spray and arrange scallops.  Cook 5" from heat source, 3 minutes on each side.  Remove from oven.

In a saute pan melt butter and olive oil together.  Saute garlic 1 minute.  Add broth and bring to a boil.  Boil for 2 minutes to reduce liquid.  Remove from heat.  Gently place scallops in pan with liquid and toss to coat.

Serve immediately with a fresh steamed veggie (if you can tolerate veggies).

Serves 2 (4 scallops each)

I haven't plugged the stats in...if you wanted to stay away from the butter and use olive oil (increase to 2 Tbsp if no butter) only I'd wager it would taste just fine and of course scallops are GREAT in protein.

Where do you find chicken brother?  LOL - I'm kidding

This sounds VERY good - getting some scallops tonight to try it this week
