Easy omelet or quiche
My sister gave me this recipe over the phone last night and I tried it this morning for breakfast and absolutely LOVE it!!! Soeasy and quick and something I can fix before or at school.
Green Giant has individual sides called Just for One. There are four in a pkg. You can get broccoli and cheese, cauliflower and cheese, etc. I used the broccoli and cheese this morning.
Peel back the corner of the plastic film. Microwave that by itself for 3 minutes (which is what it says on the package). When it is done peel back the plastic cover all the way and add Egg Beaters equal to one egg or I just scrambled an egg with a little milk and salt and pour it in. Microwave for one additional minute. Has big soft peices of broccoli and really good cheesy flavor.
If you're doing WW this is only 2 pts if using real egg or 1 pt if using Egg Beaters - veggies is 0 pts. Haven't calculated protein, carbs, etc. but I know protein has to be good.

I like your idea but personally would get a larger bag of just veggies and take them out as needed and add shredded cheese myself. I try and practice Clean Eating as much as possible.

Great Idea! I get the Just For Ones, and love the brocoli. I have cauliflower in freezer not, not a big fan so haven't tried it. HOWEVER, will try it like this for breakfast!

It is very easy and quick and very good. I have still only tried the broccoli and cheese but my sister says there's one with corn (not the corn and peas, just corn or corn and peppers?) that she uses with the southwestern egg beaters. That sounds really good. May have to get to walmart to buy some of that!
