Recipe for cottage cheese pancakes?

1/2 cup Cottage Cheese (I use pre-mixed cottage cheese with pineapple)
1 Egg
3 Tablespoons Whole Wheat Flour (I use
Arrowhead Mills Multigrain Pancake Mix)
1 Tablespoon Sugar Free Banana Cream Pudding Mix, dry
Big Juicy
Red Ripe Strawberries, sliced

Whiz in
mini food processor. Spray pan with non-stick spray. Cook on low till bubbles appear, flip. Cook till done. Serve topped with a sliced Strawberry and SF Maple Syrup (I use Cary's). Makes 4 small pancakes (pictured) or 8 silver dollar size.

These are very tender pancakes so smaller is better for flipping. They won't get any style points but they taste yummy.
 
For the plain version, (my favorite) just use plain cottage cheese and leave out the bannana pudding.  Check out eggface's site when you have a few free minutes....

COTTAGE CHEESE PANCAKES

  • 2 eggs or ½ cup eggbeaters

  • ½ cup lowfat cottage cheese

  • 1 package Quaker Oats Weight Control oatmeal

  • Put all the ingredients into a blender and mix until smooth. Lightly spray skillet and place over low heat. When the skillet is hot, spoon the batter onto the skillet and coo****il it starts bubbling and has set up, flip and coo****il golden brown. Makes about 4 pancakes. Serve with sf syrup or sf fruit spread. Pancakes freeze well.

  • Each serving has about 27 grams of protein 310 cal.If using eggbeaters 270cal

Ingredients:

1/8 cup Muscle Milk n Oats Instant Oatmeal (any flavor you prefer) I like Banana Walnut

1/8 cup 2% Cottage Cheese

1/4 cup Egg Beaters

1 Tbsp. DaVinci S/F Vanilla Syrup

1 Tbsp. Smuckers S/F Jam (any flavor you prefer) I like Blueberry or Raspberry

1 Tbsp. Carey S/F Pancake Syrup

Blend all ingredients with an Immersion (Stick) type Blender.

Spray an omelette pan with Canola Spray oil.  Pour entire batter into heated pan and cook as you would a real pancake.

This recipe makes one serving.  Do not make extra batter for later use, the flavor will die off if not used at once.

I buy my Muscle Milk n Oats from Vitamen Shoppes or online from Netrition.com (they have one shipping fee of $4.95 no matter what size the order) I tried using Dymatize Oatmeal and it tasted gross.  Let me know if you like my recipe.
