lettuce wraps

wow i made these last night and i didnt expect them to go over as well as they did!
i had ground beef but i wanted to do something different so i made lettuce wraps

1 lb ground beef, chicken or turkey
2 carrots chredded
1 can sliced water chestnuts (dice them up)

sauce-
2 tbsp grey poupon mustard (or any other spicy mustard)
1/2 c low sodium citrus soy sauce (i found one that only has 2g of sugar)
2 garlic cloves pressed or minced

brown meat (i used lean so i needed a little olive oil in the bottom of the pan)
once the meat is almost totally brown but not overdone put in carrots and water chetnuts
mix in sauce and cover and let simmer about 15 minutes

small head of lettuce and break off leaves shapes like cups
 

this made 10 wraps about 10 wraps

i added some shredded cheese on top and i also added into the mixture at the end some cooked long grain rice
you can also add in some peanuts or sliced almonds for a little extra protein (i thought of that after the fact)

im trying to think of fun wls friendly things to make on saturday. did you talk red into coming? bring your camera so we can do the whole "look who i met!"
