Looking for company-friendly recipe with limitations

Hi all.  I'm just getting into this board.  It's wonderful.

I am making dinner for a couple of friends Wednesday night (not a big entertainer) and I'm a little worried because I usually do very simple stuff.  My husband is very picky because of acid reflux problems (n fact, I mentioned the crockpot Chicken Taco stuff - which I love - and he said "eh" so I guess that's out) and a daughter who's allergic to all milk and egg products.  Since I'm not a great cook, recipes with more than 7 ingredients scare me to death.  One of the people coming has had lapband so we both will be needing high protein food.  Any ideas???

hi! i am not sure if these will help at all, but i made a noodle-less veggie lasagna for company last week, it was delicious, i just picked a bunch of veggies like eggplant, zucchini, mushrooms, etc, and mixed it in with a sauce made with ground turkey, i added cheese but im sure you dont have to.
another family favorite
mini meatloafs-
i take 1lb of ground turkey/chicken/beef
mix in some quick oats
seasoning
water (or egg or milk, but i used water)

add in whatever you want and form small loaves, bigger than meatballs, but i usually get 6-8 loaves out of 1lb
i usually make a glaze to go on top of it with splenda brown sugar, ketchup and worcestershire sauce (to taste) and pout them on top of the loaves

then i make steamed veggies to go with it

Thanks.  I ended up making spagetti but I have been looking for a meatloaf recipe that didn't have egg. My daughter is allergic to egg and so has never had meatloaf but I love it and think she would too.  I'll try it with the water instead.

My daughter is allergic to all dairy too, I use SILK brand soy milk in recipies that call for milk, we can't tell a difference and then she can eat it too.

We use Silk too.  The kind with the Omega 3s.  It really is ok in mashed potatoes and other things.  There was a kind we used before that you could really tell a difference but the Silk is good.  I don't drink it, though.  Yuck.

Just a thought, usually in the organic section or vegetarian section, there is this product call egg replacer that you can use in place of eggs in recipes. It comes in a box, it is a dry product, I believe you just add water to it to make it like eggs. Thought it might be something you could use for your daughter for recipes you like but can't make because of her food allergies.  Hope this helps!
