Remember "No Bake Cookies?" I think I made them HEALTHY!
Granted - I haven't tried this - but will later this evening and if they turn out great I will come back with pics and review.
I saw some no bake cookies there in the store and wanted them SO BAD. And I have made them basically sugar free before and they were good - but I was thinking - maybe instead of the amount of cocoa I normally use - I would use chocolate protein powder!:)
Ingredients:
- 2 cups Splenda or other sugar free sweetener
- 1/4 cup unsweetened cocoa powder (I was wondering if I couldn't use protein powder here?)
- 1/2 cup milk (I use Over the Moon, or Hi Protein Borden)
- 1/2 cup margarine (I use smart)
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1/2 cup creamy peanut butter
- 3 cups quick cooking oats
- In a saucepan over medium heat, combine the sugar, cocoa, milk and margarine. Bring to a boil, stirring occasionally. Boil for 1 minute, then remove from heat and stir in the vanilla, salt, peanut butter and oats.
- Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in an airtight container.

Yo uwouldn't want to boil the protein powder, it'll clump up and get gooey. Maybe add after it has cooled a bit, they say it's shouldn't be heated over 130 degrees.

I'm allergic to Splenda, so I make my no-bakes with agave nectar. It makes them a little softer/stickier, but you don't have to use as much (it's super sweet). I bet you could stir in some unflavored (or chocolate) protein powder when they cooled. I believe Unjury can be heated up to 160, but I'd have to recheck my container.
