recipe needed for glazed pecans

HI,

I just got back from Louisiana and handpicked about 5 pounds of pecans! I want to make the glazed pecans but need some recipes to look over. I have looked on the net but can't make a decision. I figure these would be great Xmas gifts to some friends. So can anyone help me? Again not looking for the dry coated you know the good old wet yummy sticky pecans! Just like the ones I had in Savannah!

Hello Vickie,

I've been checking for days on a recipe for you and in my travels I think I have found one that you would like. The recipe is from Kaye Bailey's cookbook A Collection of Neighborhood Recipes Living After WLS.

Crock pot Sweetened Pecans


1 lb. shelled pecans
1/2 cup unsalted butter, melted
1/2 cup Splenda OR 1/4 cup Agave Nectar
1/4 tsp ground allspice
1/8 tsp ground cloves
1 1/2 tsp ground cinnamon
1/4 tsp ground ginger

Preheat crock pot for 15 minutes on HIGH. Stir in butter and nuts until well mixed. Add Splenda or Agave, stirring to coat evenly. Cover and cook on HIGH for 15 minutes. Reduce heat to LOW and slow cook UNcovered stirring occasionally about 2 hours. Transfer nuts to a bowl. In another bowl, combine the spices and sift them over the nuts, stirring to coat evenly. Let cool before serving. Store in an airtight container.

Recipe Note; On the average 1 oz of nuts contains 179 calories, 5 grams of protein, 17 grams of fat ( 1 saturated) 5 grams of carbohydrate and 2 grams of dietary fiber.
If you use the Agave, you'll have to figure out that from the dietary info on the bottle.

tyhaks diana i will try this one too. I found a recipe that asked for ginger ale and the pecans were awesome!

I have a splenda version but I don't know the wet pecan your talking about. If you would like it?
