Birthday Cake Recommendation?

Hello! 

My Birthday is Dec 21, and every year my mother makes me a Birthday Cake. Nothing major, just a nice simple cake. Can anyone recommended a WLS/RNY friendly cake recipe? I just had my RNY on 11/6, so I am not looking for a bunch of icing or anything super sweet. I greatly appreciate any input! Thanks!

Hi.  I looked at both links and I didn't see a recipe for a blackbean cake.  Did I miss it?

I agree with the sf cheesecake, only because I can't seem to get regular cakes to turn out right when using Splenda. My cakes are to heavy and when refrigeratored get hard. I haven't tried the black bean cake (FEAR) but maybe soon. Best of luck! Christine (internetnut)

maybe you are better off not to try the black bean cake....you will want to eat all of it!  At least it is better for you than a normal chocolate cake....it really is good and moist!

Well then I best freeze half of it in blocks to nibble on like popcicles. LOL. Thanks for the info. Christine (internetnut)

An easy cake recipe is cake mix of choice with a diet soda.  You can add an egg white if you like, I never do.   For example, white cake with diet Sprite, chocolate cake with diet Pepsi.  You can even use the diet flavor sodas.  Then use whip topping for the icing.
My husband's favorite cake is devil's food with diet Coke/Pepsi.  Bake that.  The last few minutes of baking, mix 7 oz of FF sweetened condensed milk with 2 T peanut butter.  Melt over low heat.  When the cake is hot out of the oven, poke holes  in it.  Pour the peanut butter/milk mixture over it.  Crush 1-2 Butterfinger's and sprinkle over the cake.  Let it cool.  When it is cooled, "ice" with whipped topping and sprinkle another-2 Butterfingers on top.
