Low Carb High Protein Apple Betty / Crisp
Not a recipe but some ideas. Have you thought about using almond flour for the flour, splenda for the sugars, and adding protein powder to the topping and filling? I try to sneak in protein powder wherever I can without affecting the taste. If you can stand the protein flavor then this shouldn't be a problem. Hope these tips help. Christine (internetnut)

filling: 2 cups apples sliced 1/3 cup splenda, fill 1/2 ways with regular splenda and then fill remainder with brown sugar splenda 1/2 tsp nutmeg 1/2 tsp cinn mix well and spread in 9 x 9 pan topping: 1/2 cup whole grain pancake mix (can use reg flour or almond flour as well) 1/2 cup oatmeal 1/8 cup brown sugar splenda 1/2 cup melted butter 1/2 cup finely chopeed walnuts or pecans (optional) mix until crumbly, adding more oatmeal if needed. Sprinkle over apples. bake in 350 oven for 30 minutes or until topping is browned. Can also double recipe for 9 x 13 pan. I would add in the protein powder to the topping ingredients. Diana |
I made a peach crisp what was great. The topping was :
1 package SF butterscotch pudding,
1 cup old fashioned oats
1/4 cup Splenda
3 tablespoons butter
mix with a for****il crumbly. sprinkle on top of the fruit that I had sweetend with 1/4 c. Splenda and flavored with 2 T. sf gingerbread DaVinci syrup. bake 375 for about 35-45 minutes depending on the firmness of the fruit.
