They look delicious (as usual)!!! I think I have just enough ricotta to pull this recipe off. does it matter what kind of apple you use? Should it be red or green or one of the mixed ones? Just want to make sure that it doesn't make a difference before I try it out. (:

I think these sound FANTASTIC!  I found another recipe, the Oatmeal Cottage Cheese pancakes on your site last week that I made, and they were SO tasty!  They make me feel so "normal".  I even fed them to DH.  He noticed they were different, but he couldn't quite figure out what was different.  I told him it was the oats, and didn't tell him they were SF and actually pretty good for you!  I'm working on clearing those pancakes out of my freezer (I can only eat about 1/2 of a pancake at a time) and then I'm going to make the Ricotta Apple Pancakes.   

LOVE your blog, I've tried a couple of your recipes and haven't been disappointed yet!

this sounds heavenly, I wonder if it would work with the no sugar added apple pie filling and maybe a little drizzle of sugar free caramel sauce??  Would that make it no longer WL friendly?

Topping it with the pie filling and caramel would be great.  It would add a few carbs from the apples, but we're talking a couple tablespoons, so that's not bad.

I've done the Oatmeal Cottage Cheese pancakes...smear them with chocolate protein pudding and some of the NSA cherry pie filling.  SO GOOD!
