Eating the decorations

Now that halloween is over I've started cooking up the decorations (pumpkins).  We have a few pumpkins around and it is very easy to cut them open, scoop out the insides, and bake until mushy.  I started doing this last year and I freeze the cooked pumpkin in two cup portions (roughly can sized).  A food processor also helps to get a better puree after cooking.

You don't need the special "pie pumpkins" and you can add a little sugar (2 Tbsp) to the puree if you like.  Oh, don't try this with the icky (by now) carved ones

I just cooked one down yesterday and made pumkin bread for my family. They loved it and I am going to send some to my son, stationed in Japan. I also roasted the seeds for them. Do you have any other good ideas to do with it? I have about 6-8 cups to work with.

Pumpkin is one of those things that often ends up in sweet things only (like zucchini).  A shame really.  You can try these:
