Pumpkin Pie Bars (I used whey Low)
2 c fresh pureed pumpkin -about 1, 15 oz can but more liquidy, so if you use canned check the baking time.
1 single serving container unsweetened applesauce (this equals about 6 tablespoons)
1 8oz pack neufchatel or ff cream cheese at room temperature
3 scoops of Anywhey unflavored protein powder - if you use a flavor use something complimenting, like vanilla or caramel or cinnamon and adjust the sweeteners accordingly.
1/2 stick of melted butter (4 tbsp)
1/2 to 1 cup of preferred sweetener - to your taste preference (I used 1 c of whey low perfectly sweet but not overly so)
3 tsp of cinnamon (mine were generous)
1 tsp nutmeg (again generous)
1/2 tsp ginger (a bit generous)
1/2 tsp of Allspice (not generous!! - could use ground cloves instead - I couldn't find mine so I used allspice)
3 large eggs
350° oven
Beat pumpkin, applesauce, and cream cheese in a medium sized mixing bowl, add melted butter and protein powder, beat well after each addition, make sure no lumps or very few tiny lumps of CC.
add sweetener... slowly and taste batter for desired sweetness (i think it is a little less sweet after you bake, this also depends on sweeteners used, you may want 1.5 cups of erythritol but only 3/4 c of splenda...)
add spices, blend well add eggs and beat until well combined.
pour into 8x8 cake pan sprayed with pam or whatever nonstick you like. Pour in batter, tap to remove air bubbles. Place in middle rack and bake 30-35 minutes.
Allow to cool completely (Ok I cut off a piece and stuck it into the freezer so I could try it right away)and enjoy.
And no I do not have stats sorry I just do not do them. They will also change depending on sweetener and protein...
Oh and this is a texture cross between pumkin pie and cheesecake kind of.. not as thick as cheesecake but not as smooth as pumpkin pie either.
