Fish Anyone?!?!

I am looking for some interesting tilapia, cod and mahi-mahi recipes. Need a little variety!  By the way thank all of you for the delish recipes I read and fix all the time!

i take tin foil spray with pam put fish in center sprinkle citrius fish seasoning on it both sides then fold up put in oven 350 bake about 30 min delicious i also do the same with vegetables sliced and cook

I got this recipe from one of my many diet books (The Fat Flush Plan), but I think it is a good WSL friendly recipe too.  It was really good, and fairly easy.

You can make this with pretty much any fish fillets; cod, halibut, red snapper, orange roughy, sole, etc.

1 lb fish fillets of your choice (I used red snapper)
1/2 cup no salt added vegetable broth
1 tbsp minced shallots
1 tbsp fresh chopped parsely
1 tbsp fresh dill
1/4 cup fresh lemon juice

Preheat the oven to 300.  Arrange your fish in the center of a baking dish, and add the broth, parseley, shallots and dill.  Bake until fish is opaque in the center, 15-25 minutes.  Transfer the fish to another dish.  Add the lemon juice to the juice in the baking dish, stir, and the pour it over the fish.

YUUUUUUUMMY, and it's VERY moist and tender.

Have you tried this since surgery? I love fish and can't seem to find one that will stay down.

Thanks for that recipe. Oh, I envy you living in Anchorage. I lived there 5 years, and boy, did we take advantage of the availability of fresh fish (all kinds). Really miss that.

Just last night I had Tilapia. I sprayed Crisco Olive oil spray on both sides and then coated each side evenly with Zatarains Blackened seasoning. Get a pan hot and cooked about a minute or two on each side. It was great but I like spicey.

That's how I like it, too. Sometimes I use Paul Prudhomme's cajun seasoning. Just before it gets done, I put about 2 tsp of RealLime lime juice in the pan. Gives it a great flavor.

I will have to try the lime to give it a little more kick and a little different flavor. I had it tonight too. It is so good, I hope I don't burn myself out on it. Before I only cooked fish a couple of times a year but I have a feeling I will have more now.

I try to have fish a couple of times a week. My favorites are salmon, tuna, and tilapia. Fortunately, my husband likes it too. We had salmon tonight.
