SF/FF Pumpkin Cake

I made mini nuffins for my support group and they were a big hit. Thought I'd share the recipe since it's the season for pumpkin.   I tweaked the recipe from the original full sugar, full fat recipe. ENJOY!!

1 Can pumpkin, not pumpkin pie mix
4 eggs
3/4 cup unsweetend apple sauce
1 cup Kellogs Allbran cereal
2 cups flour ( I used 1 cup white and 1 cup wheat)
2 cups splenda
2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp allspice
Optional Walnuts
Optional Unflavored protein powder (2 scoops)


Directions

In a large bowl, beat eggs until foamy, add pumpkin, apple sauce and cereal and mix. Sift in flour, baking powder, baking soda, salt, spices and splenda and stir to blend. Pour batter into a greased 10" bunt or tube pan. Bake for 1 hour and 10 min. Cool completely before removing from pan

Deedums, this sounds very doable!!  is it moist?? and does it freeze well??  have you made muffins by chance from this recipe??  Thanks in advance.  Patti K.

Hi Patti.
The muffins were not dry, but were not as moist as the original recipe using oil. I have not frozen this version, but the original recipe freezes very well. I made these into mini muffins because it was easy to distribute at my support group meeing and allows for greater portion control. I baked he mini muffins for about 10-15 minutes. Not really sure, I just checked them with a toothpick when I thought they were done.

Sounds great!  I think I will plan to make them for my family over Thanksgiving weekend!

Quick questions ... What temp is the cake baked at?  And did you use the same temp for the mini muffins?

 So sorry, Bake at 350 . Yes same temp for mini muffins. baked for about 10 to 15 minutes. I don't remember exactly, when they looked done I tested with a toothpick.

Enjoy. They were really yummy. Folks who never eat SF/FF ate them and never suspected they were a healthier version
