looking for low carb soup/stew recipes

Im trying to cut my carb intake to Atkins numbers. That would be 20 or less a day so Im looking for a low carb soup/stew. I do like my soups thick like chili or stew. The carb count for the soup/stew would have to be 10 or less per serving please.

Just wondering if anyone has any recipes. I have to look up the carb count on broths.

I don't know what the carb counts are on these recipes but I do know that they are low carb.

Broccoli Cheese Soup

Ingredients

2 bags frozen California blend veggies

6 cups water

1 tsp. season salt

5-tsp. chicken soup base or 5 chicken bouillon cubes then omit

season salt.

1 box frozen chopped broccoli

1/8 - tsp. cayenne pepper

10 oz. LIGHT Velveeta cheese

Directions

Cook veggies in the water w/ bouillon cubes.

When veggies are tender remove veggies from water and puree’

in blender. Return veggies to water. Add box of chopped

broccoli and coo****il tender. Slice 10 oz. Of Velveeta Light

into cubes and add. Stir until melted.

1 WW point per cup.

Cabbage Soup like Big Boys

Ingredients 

Directions

Put V-8 juice and celery into blender and blend on high speed,

about half a minute or until minced. Pour into 6-quart kettle and

add each remaining ingredient as listed.

Bring to boil.

Cover and reduce to gentle simmer — simmering two hours or

until cabbage is tender.


1 (12-ounce) can V-8 juice

4 ribs celery cut in 2-inch pieces

2 cans (14 ounces each) sliced stewed tomatoes

2 cans (14 ounces each) clear beef broth

1 broth can water

1 smoked pork hock (3/4 pound) or ham steak in bite-size

pieces

1 onion, about the size of a lemon, diced

1/4 of a 2 1/2-pound head cabbage, diced and cored and outer

leaves discarded

1 (14-ounce) can sliced carrots, undrained and finely diced

1 envelope onion soup mix

1 teaspoon dry minced parsley

Generous dash pepper

Salt to taste if desired
