Whipped butternut squash
I tried this recipe, and it turned out pretty yummy! It's like mashed potatoes, but a lot better for you.
1 Butternut squash
1/2 cup lite sour cream
1/4 cup butter or margerine ( i used butter)
salt and pepper to taste
Cut the squash in half lengthwise, and scoop out the seeds. Place both halves cut side down in a baking dish, and fill the dish with water, about an inch up the side of the squash. Bake for 1 hour at 375.
Take the squash out of the water and use a fork or spoon to get the squash out of the skin. Throw the skins away. Add the sour cream and butter to the squash and whip! Add salt and pepper to taste.
My hubby added more butter to his, but even he liked it, and he usually doesn't like veggies unless they are potatoes or corn!
