Three Sisters Soup

I was goofing around in the kitchen with items coming in from the garden and I made my own interpretation of a Three Sisters Soup.  Turned out quite well.

Three Sisters Soup
2 tbsp olive oil
2 cups chopped onion
2 cups cubed butternut squash
1 qt vegetable broth.
2 cups green beans, can use frozen
2 cups corn kernels, can use frozen
2 cans Great northern beans
2 tbsp Penzey's Northwoods Blend*
1 tbsp Sage
Salt and Pepper to taste

1.  In a large soup pot, add the oil and saute the onions until soft (about 5 mins)
2.  Add the butternut squash and spice blend and saute until squash starts to soften, onions should get a little brown.
3.  Deglaze with broth and boil squash until just tender.  Add water if broth does not cover.
4.  Add remaining vegetables and canned beans.  I did not rinse and drain beans as I wanted a thicker soup.  Let simmer until green beans are tender.  Squash should now be soft but not mushy.  Using thawed frozen veggies would make this last step a snap!

* Contains: paprika, chipotle pepper, black pepper, cayenne pepper, thyme, rosemary and garlic.

Makes approximately 8 two cup main course servings: 459 Calories, 5g Fat,
58g Carb (net), 26g Protein (complete).

Sounds quite good - what are great northern beans?

Great Northern beans are just a kind of common white bean.  Like Cannellini.  They'd be the ones you'd use to make Navy Bean soup or Baked Beans.

Penzey's is the BEST! I'm lucky enough to have a store right in my hometown! Their spices make such a difference!
