Beef Stroganoff

I need ideas for stroganoff without noodles.  Pasta and me just don't get along.

very easy and VERY good---

1 can cream of mushroom
1 can cream of chicken
1 box fresh mushrooms
1 package of beef stew meat
1 package of onion soup mix
1 16oz container of ff sour cream

Put all ingredents in corck pot except sour cream

cook for 6 to 8 hours on high
turn off add sour cream stir and eat

I put it over egg noodles for my husband but I just eat it like soup for myself and add a couple green onions---it sounds too good to be true but WOW it's gooddddd

That sounds yummy.  You could make Zuchinni "ribbons" with a peeler and steam for a WLS friendly noodle substitue.  Or, how about those Shiratake Noodles?

I have not tried this recipe but am making it tonight.  It came from the cookbook "Eating well after WLS".  

Ingredients:

cooking spray

2 cloves garlic, minced

1 lb lean eye of round, cut into 1 inch cubes

1 6oz can tomato sauce

1/2 cup dry red wine or beef broth

1 cup fresh mushrooms, sliced

1 bay leaf

1/2 cup Fat Free sour cream

salt and pepper to taste

1.  Coat the bottom of a large skillet with cooking spray and saute garlic for 1 minute.  Add meat and brown, stirring for 3 minutes.

2.  Add tomato sauce, wine/beef broth, mushrooms, and bay leaf and simmer covered over low heat for about 1 1/2 hours.

3.  Turn off heat and stir in sour cream.  Add salt and pepper to taste.

Makes 4 Servings
