I use the crock pot so about 8+ hours on low. The can of soup (undiluted) makes a sort of 'gravy'. Oooh and the bay leaf sounds great!
I really craved chicken, too, but didn't tolerate it real well until recently. Just has to be real soft (boiled) and swallowed with some kind of sauce to get it down. I'm tired of cottage cheese and tuna salad! That's about all I can really do without discomfort. As much as I am sick of pureed food, I'm afraid I'm stuck there for now. Even chicken salad disagrees with me. :-(

So far nothing has really upset my pouch. The only issue I have had was instant mashed potatoes...I took 3 bites and that was all I could handle. I have been eating chicken for a week now....mainly chicken salad and pureed chicken chili. I'm still in the pureed stage, but I have been testing my pouch to see what agrees or disagrees and so far..I'm fine.
Before surgery, I used to make boneless lean pork chops in my crock pot with a can of low fat cream of mushroom soup. I would brown the pork chops first, but only for about 3 minutes on each side, then put them in the crock, pour in the soup, cover and cook on low for 4 hours.....It comes out so good! I'm anxious to eat this again too.....

I've been cooking my butt off but only eating a few bites; hubby thinks maybe I should cook a little *less* food, now that I can't eat a whole serving plus seconds, and leftovers. LOL
Megan, I just remembered too, that a can of stewed tomatoes and some italian seasoning is real good over crockpot (or baked) chicken breasts. You can top it with cheeeeeeeeese when it's all done.

I really cook so simple. Sometimes I go all-out, but most days I toss a few ingredients together and wing it. With work schedules and all, I don't have the time or energy. The crockpot is my new best friend, and it allows the food to get a nice soft consistency for me. However, I must admit, with my new pouch and new way of living, I am appreciating simple and flavorful so much more. I'm focused on nutrition and not just *fast*; I'm using more whole foods and a lot less processed, and I really aim to hit up the protein as the primary, veggies come in second, and we rarely if ever have rice, pasta, spuds, or crusting/breading, etc. My husband, who still follows Atkins, won't eat bread but I do love a nice piece of whole grain toast with peanut butter!
Is it weird I can tolerate tuna salad on toast but I can't eat but a few bites of chicken? Granted, I can just have a few bites of the tuna and toast (and I only have one slice like twice a week), but tuna doesn't give me the pressure I feel from well-chewed chicken.
I just came out of the pureed, and made Nik's enchiladas the other day (low carb tortillias). I ended up picking the chicken out and eating that and cheese, because the gumminess or chewiness of the wrap was too much for me at this point. Refried beans and sour cream! Mmm!

I can't wait to eat toast. I love tuna salad, egg salad, and peanut butter on toast. Eating them by themselves right now is kinda yuck, but I know in time...I'll have my toast.
I'm so used to cooking a lot cause I have 2 teenage boys that have bottomless pits for stomachs, but I used to eat right along with them. Learning to cook smaller amounts is something I need to work on......I was the one that ALWAYS ate the leftovers.
I was watching Rachel Ray today and she made an awesome recipe for a healthy Egg Foo Young. It looked so yummy. It was basically eggs and veges with some meat for protein. I checked out her website but the recipe hasn't been posted yet....I'm so going to try it.
I have also found this new bread that may work out great for us.....it's called Arnold Sandwich Thins. They are low calorie and high in fiber. Their website has some awesome healthy sandwiches......

I am not a chef either. I sort of know bu the chicken and how much i put in there.
I serve this over rice if I need to stretch it.
