Looking for dinner ideas

Ok I am 10 months out and I have lost 117 lbs so far so there is no complaint except I have not been eating like I should so if yall have any good dinner receipts that you would like to share I sure would appreciate it.  I have been on a stand still for over 2 weeks now that I havent lost anything.

I've drug the crockpot put of hiding and have pinto beans cooking as I type. There was a post  a few days ago that had some links to crock pot recipes that sorta sparked my creativity again.

Thank you, I will have to check it out.  It is just my daughter and myself most of the time for dinner so its hard to cook now.

I eat mostly meat...

Tonight I had turkey and some bean salad. The turkey was part of a turkey breast wrapped in a slice of bacon. I found them at Sam's club.

I make alot of bean salads and Chili..

My favorite bean salad is chickpeas, artichoke hearts, olives, chopped tomatoes, chopped onions, chopped cucumbers and garlic with balsamic vinegar and a dash of olive oil.. It is YUM ! lots of fiber and it makes a great side dish.

Tomatillo Chicken                   

2 lbs tomatillos, washed & halved
1 T oil
3-4 lbs chicken thighs (8 thighs)
2 jalapenos, chopped
1/2 med onion, chopped
3 garlic cloves, minced
1/2 can (15oz) hominy, drained & rinsed (1/2 C)


Puree tomatillos, set aside.

Season chicken w/S&P and brown in oil in pan or Dutch oven, set aside.

Saute onion & jalapenos, add garlic, stir in tomatillo puree & hominy.

Add everything to slow cooker and cook 4-6 hours until chicken shreds easily.
