I make mini turkey meatloaves in a muffin pan. Actually, thats what Im making for dinner. I dont necessarily have a recipe...but I can share what I usually put in them. They are VERY tasty and the whole family loves them.

I package lean ground turkey
1 generous handful of dried italian parsley
3 tablespoons dried onion flakes
couple shakes garlic powder, salt, pepper
1 egg
3-4 talespoons panko bread crumbs
Ketchup

Just go thru your spice rack and see what inspires you! LOL thats what I do. I LOVE worstichire sauce too so I usually throw that in but I think Im out today. I use alot of dry spices so when I add any liquid, the meat doesnt get too 'saucy'.

I fill the muffin cups just about full cause they dont rise...and they dont shrink much since its lean turkey meat. Top each one with a squirt of ketchup and bake at 350-375 for about 30 minutes. Cooks WAY faster than traditional meatloaf and one serving for me is good plus there are leftovers. this will make about 6 meatloaves depending how much you fill the cups.

Turkey Muffin Meatloaf

1lb turkey breast ground
4 servings of stove top stuffing complete

Mix all together and place in 6 muffin pans (the stove top will still be heard because you did not use all the water necessary to soften)
