Lite or low fat cream cheese icing
cream together 8oz cr cheese and 2/3 c sugar (adjust to taste or use splenda ect)
whip 1 1/2c whipping cream, fold with the cr cheese. You can also add a little vanilla.
This is super good, you can use cool whip if you prefer, even the FF one. I sometimes sprinkle a little sugr free vanilla pudding powder while folding together to make it stiffer, maybe about 1 tsp.
This is perfect for cupcakes, it is light but still perfectly sweet and yummy.

1 pkg instant SF pudding (vanilla, or I use the white chocolate, which is a whiter color)
1 1/2 c cold FF milk
1 small container SF cool whip
beat pudding and milk together for 2 minutes. beat in cream cheese. you can add additional Splenda if you like it sweeter. fold in Cool Whip. This is great!! Will frost a 2-layer cake or I think about 24 cupcakes, maybe more. -Sarah
