Chili Recipe Needed

Does anyone have a great veggie and or turkey chili recipe?

I completely cheat on my Veggie and Turkey Chili recipes. But when I make it for a pot luck at the office, everyone wants my recipe!

I start with Bear Creek Darn Good Chili Mix (you add water and one small can tomato paste). To the chili I add one of the following:

Ground Turkey (1 lb. browned separately then added)
and my NEW FAVORITE: Morning Star Farms "Crumbles" (They look like ground beef, but are veggie protein). With Morning Star, you just add directly to the chili in the simmer stage, no other cooking needed.  With both of these additions, my DH didn't know the difference between beef and the turkey and/or Morning Star Farms.

When all is mixed and simmered, it makes a good 8 to 9 cups of Chili. Low Fat, High Fiber,  High Protein (highest is with the Morning Star Farms)

AND FAST!!!    I just don't have time to cook like I'd like to.  For an extra special treat, I will make Krusteaz fat free cornbread, and crumble some on top of my 1/2 cup of chili.

So there ya have it...my secret is out!

That recipe sounds really good. Just want to clarify you add the turkey and the veggie crumbles? As soon as I find the other stuff I'm going to make this.

I just brown a big skillet of turkey along with a big onion chopped...Add a chopped green pepper, few cans of beans of choice, usually black beans and pinto...Add a big can of stewed tomatoes, can of tomato juice or tomato soup...I like putting a can of mushrooms (juice included) in mine...Toss in a pack of chili mix, or you can sprinkle in some chili powder, garlic powder, onion powder, salt and pepper...I usually add just a few small pinches of splenda/ or sugar to take the tart off from the tomatoes...I like to put mine in a big kettle with a lid and just slow cook, stirring occassionally for at least an hour...Or you can put in a crock pot...I like to put mine in my serving bowl, top with few diced up onions, and spoon of lite sour cream...Optional ( sprinkle of favorite cheese)...

Super easy and I got from Mens Fitness

Brown 1lb ground turkey with garlic, diced onions, garlic and chili powder.
Add one can cooked kidney beans, one can white beans and one can black beans.
*eta: and one can of diced tomatoes

I serve over diced lettuce with fat free sour cream.

 I LOVE to cook and came up with this one on my own.  Delish!

Protein Packed Turkey Chili
2 lbs. Lean Ground Turkey (93/7) 1 can Chili Beans/Ranch Style Beans (don't drain) 1 can Black Beans, drained 1 can Stewed Tomatoes (don't drain) Chili Powder to taste Cumin to taste Garlic Powder to taste Salt to taste
Brown turkey meat in large pot (drain if needed). Add all beans and stewed tomatoes. Season to taste. Bring to a boil, reduce heat, and simmer for 2 hours.
It's always better the second day. For those who are not dieting or WLS patients, they can add cheese, a dollop of sour cream, and enjoy with corn chips or corn bread.

 I came up with this one too.....

Lentil Chili

 

 

Combine 1/2 vegetable juice and 1/2 water in a large pot. 

Add 1/2 bag (probably about a cup) of dry Lentils. 

 

Cook lentils according to directions on bag. 

 

 

Then: 

Brown up some onion (optional). 

 

Then add.... 

1 can stewed tomatoes 

1 can rotel 

1 can ranch style beans 

1 can black beans, drained & rinsed 

1 can red beans, drained & rinsed 

season to taste with chili powder, cumin, and a dash of garlic 

 

 

Combine everything. You'll have to bring everything to a boil and then let it simmer for 1 hour. This would be excellent in a crockpot. Oh, if you're not familiar with lentils, they do expand a bit. 

 

It tastes great the first day, but even better the next day! Enjoy!!! = )
