Lori, I have a few from this book, "recipes for life after weight loss surgery." by Margaret M. Furtado. Someone suggested it and although I haven't cooked anything from it it seems great. You can get it a borders for $19.95. try iy out!

There's a recipe on eggface's website that I make almost weekly. It's called Shelley's Creamy Crab Topped Baked Fish. I love it.

Hi Red, my favorite way to bake fish is simply to lay the fish on a baking dish, cookie sheet or shallow casserole dish, spread your favorite mayonnaise on each piece, sprinkle with onion powder, paprika, dill, salt and pepper.  Bake at 350º for 15 minutes, then check for doneness every few minutes.

Any meat that is overcooked will be dry.  The problem is not the recipe, its the heat.

Fish en Papillote is nice.  Like this one:  http://www.wchstv.com/gmarecipes/fishenpapillote.shtml

Then again, all you need is almost any fish with almost any veggies.
