OMG - WW recipe cards from 1974 - Rice Pudding

Hey, Hey, Hey.....I was cleaning out my office and found some "old" WW recipe cards from 1974.  Guess that shows you how long my a$$ was dieting and on the double load side  

I thought you would get a kick out of these as much as I did....

Pineapple Rice Pudding

12 canned pineapple slices with 3/4 cup of juice (no sugar added)
3/4 teaspoon salt, divided
1/2 teaspoon cinnamon
1 envelope unflavored gelatin
3 cups cooked enriched rice
3 cups of skim milk
Artificial sweetner to equal 6 tablespoons of sugar

Dice pinapple slices.  Combine juice, 1/4 teaspoon salt, and cinnomon in a small saucepan.  Sprinkle with gelatin and let stand to soften.  Stirover low heat until gelatin dissolves.  Add diced pinapple.  chill until syrupy.  Meanwhile, combine rice (cooked without salt), skim milk, sweetnener, and remaining 1/2 teaspoon salt in a saucepan.  Cook over moderate heat for 25 minutes, stirring often until pudding is thick and creamy.  Serve hot or cold; top with pineapple syrup.  Divide evenly.  Makes 6 servings

What a blast from the past...no points and or nutrician break down. We just trusted them

Yeah, because enriched rice is sooooooo healthy.

What is fascinating is recalling how Low Fat / Low Carb "magic bullet" thinking isn't the solution.

Just wait, in 2014 the recipe might make a comeback
