Drunken Chicken

This was BY FAR the absolute BEST, moistest, most wonderful chicken that I have had in a long while, if ever.  The white meat was unbelievably moist and carved like butter!  This was "curl your toes" good and I can barely wait for lunch to have the left overs!
This recipe would also work with turkey and even pork roast.  AWESOME!!!!!!!

Drunken Chicken 

Original recipe by "berts4"

 

Brine:

1 c. kosher salt

1 c. sugar

8 cups water

Juice of 1 orange

Juice of 1 lemon

Juice of 4-5 limes

½ c. tequila

Handful of chopped fresh herbs (I used rosemary, sage and thyme)

2-3 cups of ice

Extra water to cover chicken(s), if needed

 

 

Whole chicken(s)  (I have to cook 2 for my family)

Can of beer (or clear soda) per chicken

1 head of garlic per chicken--top cut off about 1/4 inch

 

 

Dissolve salt and sugar in ho****er.  (I heated the salt and sugar in about 2-3 cups of water in the microwave to help with the dissolving---stir and stir until no granules are left.)  Add all other brine ingredients.  Make sure that meat is covered.  Let soak for 3-24 hours.  (This batch soaked about 22 hours.)

 

Start grill for cooking with indirect heat.  (Light charcoal and when ready, push coals to both sides of grill leaving center clear.)

 

Empty half the can of beer into a glass.  Give to husband to drink.

Put chicken onto can with remaining beer.  Cover hole in neck with whole head of garlic, cover with neck skin.

 

Place chicken(s) onto grill over empty space and cover with lid.

 

Coo****il meat thermometer reads 155-160. 

 

Remove from grill and let sit 15 minutes to complete cooking and settle juices.

 

Carve and enjoy!

Tried this recipe and my wife and I found it fantastic. Going to try a turkey.I always brine my chicken or turkey before I grill it. I use Alton Brown's(from Food TV)recipe for brining. It's great, everyone loves it.Just make sure you don't overcook the chicken or turkey.
